Fans of those crunchy baguettes are certainly on to something! Artisan baked goods are prized for their freshness, especially when it comes to ingredients. The term “artisan” conjures the image of artisan bakers who are masters of their craft, shaping bread by hand and only using the basic bread ingredients: flour, water, yeast, salt, and most importantly time.
However, while artisan bread is extremely popular these days, the term itself has no technical definition. It actually refers to a kind of short shelf-life bread that is usually offered unpackaged (in baskets) and consumed immediately after baking for maximum freshness. It comes in all shapes and sizes, but it usually has a boule- or batard-like shape with cuts on the loaf’s surface.
Fresh Ingredients and Formulations
Artisan baked goods contain natural and high-quality ingredients. Although these types of baked goods are known for their hands-on methods, innovations in the industry are simplifying the process for these qualified skilled workers. I’m excited to see what ingredient solutions and technologies will be available at IBA 2023 to help modernize this traditional method of baking, while still maintaining its integrity.
